Bill and Will Gause run Carolina Cuisine out of Columbia, bringing more than 50 years of combined hospitality experience and a built-in barbecue pedigree: their sister company, Billy G's Carolina BBQ, has won three Gold Awards from The State newspaper's Reader's Choice Awards for best BBQ, best food truck and best catering.

Weddings get action-station service, with chefs plating tableside, or buffet, built around Southern dishes like the "Palmetto Station" featuring pulled pork and hickory-smoked brisket, shrimp and grits served in a martini glass, and chargrilled beef tenderloin on mini brioche. Palmetto Cocktail, the company's own bartending arm, runs the bar with signature cocktails and classics.
